Yesterday nite i made vegetable rice just for a change in the monotonous menu we have every day (plain rice + curries) . It turned out well and am posting it here;) This can be served for 2-3 people.
Basmati rice – 2cups
Onions chopped – two
Tomatoes – 1 big
Potatoes/green peas/gobi/carrot /capcicum/beans- 1 cup (u can pick whtever u like in it.. i had used potato + gobi yday)
Green chillies sliced – 4-5
cloves – 4
Cinamon – 1 inch
Bay leaf – one
Ginger garlic paste – 1 spoon full
First soak the rice in water for 15min. Then take a pan and heat 4-5 spoons of oil. Add cloves , bay leaf and cinamon to it.Then add chopped onions and green chillies to it. Also add ginger garlic paste. fry it for 1-2 minutes till the raw smell of ginger-garlic paste is gone. Then add tomatoes and vegetables to it. Fry for 3-4 minutes and add rice to it. Fry for one minute and then add 4 glasses of water. Add salt to taste and put it under pressure .
Once it is cooked , garnish it with cashews and corriander. This can be served with onion raitha or aloo kurma.
