Karivepaku rice / Curry leaves rice


Curry leaves – 1 cup

chana dal — 2 tbspoons

Jeera –  2 tbspoons

pepper corns — 1 tbspoon

red chillies – 4

oil – 2 tbsp

green chillies – 2

Rice – 1 1/2 cup

salt – to taste

Cook rice in 1:2 water ratio and keep it aside.

Roast chana dal, jeera, dhaniya, pepper, red chilli in a pan with little oil. Fry till they turn golden colour.

Add curry leaves and switch off the flame. Let the pan stay on stove such that curry leaves becum little crispy.

Once it is cooled, grind it to coarse powder by adding salt.

Take a pan , add oil. Now add groundnuts, jeera , green chillies ..fry for one minute. now add grinded powder and fry for 1 min. Add cooked rice and mix it well by switching off the stove.

This rice goes well with papad or fryums. I served it with homemade potatochips.

Tawa Pulao


Ingredients :

Rice – 1 cup

Cumin (jeera) – 1/2 tbsp

Onion — 1 chopped

Ginger garlic paste – 1 tbsp

Carrot – 1

Green peas – 1/4 cup

Tomatoes — 2 (medium)

Capsicum  – 1/2 cup chopped

Red chilli paste – 1 tbsp

Pav bhaji masala – 1 tbsp

Heat oil in pan and add cumin.

Add  onions, tomatoes chopped,ginger garlic paste,  salt. Fry till tomatoes are soft.

Add vegetables, red chilli paste , pav bhaji masala … Mix well..add 1/4 cup of water and cook till vegetables are softly cooked and water evaporates.

Now add cooked rice and mix well.

Garnish with corriander leaves.

Please note that red chilli paste is optional here and you can add depending on the spicy level you prefer.

Serve this hot pulao with either raitha or any side dish.

Black chana pulav/ Nalla senagala pulav


This was a very quick pulao to cook and was very tasty.

Ingredients :

chana soaked over night – 1 cup
rice – 2 cups
onions – 1 chopped
green chillies – 3
boiled potato – 1 cut into medium pieces ( you can cut potato into small pieces and fry it in oil for 5min such that it gets cooked instead of boiling it. this is optional for boiled potato)
ginger gralic paste – 1 tbsp
turmeric powder – 1/2 tsp
oil – 2 tbsp

boil chana and drain water in it.
Take a pan on the stove. Add oil , jeera , chopped onions and green chillies.
fry onions for 2-3min
Add ginger garlic paste, salt and turmeric.
fry for 1-2mins on low flame until the raw smell of ginger garlic paste is gone.
Now add chana , boiled potato pieces , cooked rice.
Saute it well til it is dry.
Serve the tasty pulao with raitha and papad.

Beetroot rice


Ingredients

Rice – 2 cups
Onion – 1 no
Beetroot – 2 no (medium size)
Green Chilly – 2 no
Mint Leaves – 1 medium bunch (optional)
Cinnamon – 2 sticks
cloves – 4 no
Oil – 2 tsp
Salt as needed

Preparation :

Wash and grate the beetroot.
Soak the rice for about 15 minutes.
Cut the onion and slit the green chillies.
In a pressure cooker heat 2 tsps oil. Add the cinnamon sticks, cloves in medium flame.
Next Add the onions, mint leaves, green chillies , grated beetroot and saute well until raw smell of the beetroot goes away. Add required salt.
Add 4 cups of water and allow it to boil.
When the water starts to boil add the soaked rice.
Close the lid and pressure cook for 2 whistles.

This rice can be served with raitha/papad.

Mint/Pudina Rice

Ingredients:

Rice – 2 cups
Pudina leaves – 2 bunches
3 green chillies
cloves/cinamon — few
1 spoon ginger garlic paste
Oil – 4 spoons

Grind washed pudina leaves with water into a paste.
Put oil in a pan. Add cloves, chillies, ginger garlic paste.
Then put grinded paste and cook it well for 10-15 min on low flame till the raw smell is gone.
Mix this with rice and add salt.
Granish the same with chopped coriander leaves.

Vegetable rice


Veggie riceYesterday nite i made vegetable rice just for a change in the monotonous menu we have every day (plain rice + curries) . It turned out well and am posting it here;) This can be served for 2-3 people.

Ingredients :

Basmati rice – 2cups

Onions chopped – two

Tomatoes – 1 big

Potatoes/green peas/gobi/carrot /capcicum/beans- 1 cup (u can pick whtever u like in it.. i had used potato + gobi yday)

Green chillies sliced  – 4-5

cloves – 4

Cinamon – 1 inch

Bay leaf – one

Ginger garlic paste – 1 spoon full

First soak the rice in water for 15min. Then take a pan and heat 4-5  spoons of oil. Add cloves , bay leaf and cinamon to it.Then add chopped onions and green chillies to it. Also add ginger garlic paste. fry it for 1-2 minutes till the raw smell of ginger-garlic paste is gone. Then add tomatoes and vegetables to it. Fry for 3-4 minutes and add rice to it. Fry for one minute and then add 4 glasses of water. Add salt to taste and put it under pressure .

Once it is cooked , garnish it with cashews and corriander. This can be served with onion raitha or aloo kurma.
